Welcome to a new feature on the blog. Jill and I are both avid Pinners. Yet, maybe like some of you (we hope it isn’t just us), we Pin way more recipes, crafts, and projects than we could ever accomplish – that is until we get our reality TV show and someone is paying us to cook, craft, farm, and drink cocktails (that’s how we imagine our show would be).
Anyway, in an attempt to get some of our Pins off the computer and into our homes (and bellies), we are going to be trying something new from one of our Pinterest Boards each week. Our experience with Pinning has been that you win some, and you lose some. Some Pins live up to our expectations. Others turn out to be a total waste of time. Back in in the dark days before Pinterest, I found the perfect brownie recipe. I don’t even remember where I got it, but I wrote it down and stuck it in my Joy of Cooking Cookbook. Then I lost it. Since that time I have been searching for it’s equal. So now when my family wants a sweet treat, I often try out new brownie recipes, hoping to find the one I will use from now on – the one I will pass down to my children and my children’s children.
This week, I made Simple From Scratch Brownies from Big Bite Appetite. The verdict? These brownies are AHH-MAZE-ING! They are a little crunchy on the outside and oooey, gooey on the inside. They are perfect.
Still, I changed them up just a little. Like my grandmother before me, I am a big tweaker of recipes. I’m forever adding my own twist to someone else’s recipe – sometimes for better, sometimes for worse. To this. I added a heaping teaspoon of espresso to the dry ingredients. The effect was marvelous. This adds just the faintest coffee flavor and enriches the chocolaty taste.
I also used. Ghirardelli Chocolate chips.
They are THE BEST. They are dark chocolate, which everyone knows is the new broccoli. The are also much larger than other chocolate chips. And everyone knows that when it comes to chocolate, bigger is always better.
We indulged in these delicious brownies with ice-cream, but then put the rest in the freezer. We could easily have polished off the pan today, but it is still Lent, and my Charming Children have given up sweets. But that just means we will get to have the rest of these luscious treats next Sunday. We can’t wait!
