Warning: This isn’t a Hippie Food Recipe!

As the title states, this isn’t a Hippie Food recipe, however, it does contain eggs, which is protein, and fruit. Therefore, it is healthy! šŸ˜‰
Overnight Blueberry/Strawberry French Toast

12 slices Italian bread loaf from the deli
1 1/2 8 oz containers of cream cheese, softened
1/4 cup powdered sugar
1/2 cup fresh blueberries
1/2 cup fresh strawberries
10 eggs, beaten
2 cups milk
1 teaspoon vanilla extract
1/3 cup maple syrup
1 cup white sugar
2 Tablespoons corn starch
1 cup water
1/2 cup fresh blueberries
1/2 cup fresh strawberries
1 Tablespoon butter

-Lightly grease a 9×13 pan. Tear or cut up bread into 1 inch chunks. arrange half in the bottom of the pan. Mix the softened cream cheese and the powdered sugar. Mix well until creamy. . Spread over the bread. Sprinkle 1/2 cup blueberries and 1/2 cup of strawberries over the CC. Top with the remaining bread. Press down to smoosh (I love that word) the bread into the CC and fruit. Beat eggs, vanilla, and syrup. pour over the bread. Cover and refrigerate overnight.
-Remove from fridge and let “warm up’ for at least 30 minutes, or the center will be hard to get done. Cover and bake at 350 for 30 minutes. Uncover and bake 30 more minutes or until top is lightly browned and center is firm.
-For the syrup: In a medium saucepan, add water, cornstarch and sugar. Bring to a boil. Stirring constantly, cook 3-4 minutes. Mix in the remaining blueberries and strawberries. Reduce heat and simmer for 10 minutes or until blueberries burst. Stir in the butter and pour over the French toast.
— Note: I doubled the syrup and used it for topping when served also. That stuff is amazing!
